About Us
Greetings! My name is Lucia Singer, and I am the founder and executive chef of An Affair to Remember Catering. With more than 20 years of culinary experience, I am very proud to have started my very own catering company where my old world values of quality, taste, and style shine through in my food. Because of this, I am confident in my abilities to deliver delicious and diverse menus for any type of event.
My love for food and different cuisines began with my journey when attending culinary school in Italy, where I learned to specialize in mainly European dishes. However, over the years, my expertise has grown to include and reflect a global culinary adventure. I've had the privilege of learning and cooking many regional and ethnic genres of food from all over the world, including Mediterranean, Asian, Middle Eastern as well as Central and South American cuisines.
At the heart of my business is the in-depth level of involvement I bring to your event; from working with you initially to begin creating a personalized menu that reflects the uniqueness of the event, to preparing tasting samples, to cooking and serving the guests. My extensive background in working with hundreds of vendors in the industry over the years has also equipped me to provide unbiased insights into reliable vendors, which I can assist you in creating the perfect day. by our dedicated kitchen staff. This depth and diversity of thought that has gone into these dishes provides a true representation of the length and

Hors d’oeuvre Menu
- Pollo a la Brasa – (Peruvian-style Roasted Chicken) Braised chicken thighs roasted w/yucca and served with yellow rice,
- Empanadas con Picadillo (Beef filled pastry)
- Bourbon & butter glazed Salmon nested on a sliced cucumber with a garnish of dill aioli
- Tropical fruit Ceviche, served with a Plantain chip
Salad Course
- 1905 Salad – Classic salad of the historic Columbia restaurant (Ybor City, FL) Fresh romaine, julienne Swiss cheese & ham, green Spanish olives & tomatoes
- 1905 Dressing – Olive oil & fresh lemon
- Cuban bread (chef choice) and butter
Dinner Course
- Platter #1 – Lechón (La Pernil) A slow roasted pork shoulder served over black beans & rice, accompanied by house made Chicharrones
- Platter #2 Meatball Parmigiana – A house made ground beef & ground pork meatball patty slowly simmered in a tomato and basil marinara, smothered with provolone cheese, and served over pasta. It is accompanied by yellow squash in a tomato & basil sauce (low salt)

- Charred beef over Tzatziki, topped w/kalamata olives on baguette
- Mini Lamb Gyros
- Tropical fruit ceviche topped w/plantain or toasted pita chip
- Lemon & mint marinated shrimp over couscous in Phyllo (filo) cup
Salad Course
- Greek Salad with cucumber, tomatoes, pepperoncini, beets, olives and feta cheese
- House made Greek dressing
- Warm pita bread and butter
Dinner Course
- Platter #1 – Lubee (green beans, tomatoes, lamb and spices) served over rice pilaf
- Platter #2 – Chicken kebab served over warm orzo with onion & feta
- Accompanied by honey glazed carrots

- Pasta with a red or white sauce, served with Italian sausage, peppers & onions (red sauce)
