Pupo's Banana Bread Recipe

(Pupo is the bastardization of pawpaw by a 2-year-old mind, lol)

Ingredients

  • 2 cups bread flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup brown sugar
  • ½ teaspoon nutmeg
  • ½ teaspoon cinnamon
  • ½ cup softened butter
  • 2 large room emperature eggs, beaten
  • 2 ⅓ cups mashed overripe bananas

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C ). Lightly grease and flour a 9x5-inch loaf pan.
  2. Combine flour, baking soda, salt, nutmeg, and cinnamon in a large bowl.
  3. Mash all overripe bananas in a small bowl.
  4. Beat brown sugar and butter with an electric mixer in a separate large bowl until smooth.
  5. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture until just combined.
  6. Pour batter into the 9 x 5 inch greased pan
  7. Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 60 minutes.
  8. Let bread cool for 10 - 15 minutes, then turn out onto a wire rack to cool completely.

Notes

  • In the past, I have added multiple types of additional ingredients to taste (depending on the child/grandchild eating it 😀 )Some of these components are as follows:
    • Cranberries
    • Blueberries
    • Walnuts
    • Chocolate chips
    • Lemon zest
    • Toasted oats
    • Caramel
    • Course sugar topping
  • It has been suggested that I add cream cheese, honey, and other ingredients, but I have not tried those yet. Please don’t hesitate to experiment and let me know how it goes!!!
